I bought them and asked my wife to make pickled horse mackerel. Sprinkle salt on the horse mackerel fillets, leave them in the refrigerator for a while, wash them lightly to remove the salt, and pickle them in vinegar. Okinawan Pilaf with Japanese Mugwort & Offal Soup

Today's topic is Okinawan cuisine. I like Okinawan cuisine and often ask my wife to make it for me. Some Okinawan dishes are well known and eaten even in other parts of Japan than Okinawa, but I think many Japanese people have not tried the Okinawan pilaf with Japanese mugwort and offal soup that I will be introducing today. In Japan, japanese mugwort has tra...

Dishes of Loofah and Dried Fava Beans

Fennel and Beans, simmered fava beans, are a snack that also appears in Lu Xun's novel "Kong Yiji". However, I have not read it yet. Fennel and Beans was served to workers and other common people in taverns in Lu Xun's hometown, Shaoxing Prefecture (present-day Shaoxing City, Zhejiang Province). Even now, it is considered one of Shaoxing's specialties. It is made by simmering fava beans with star anise and fennel seeds, along with Shaoxing wine and soy sauce. I love it too, and my wife often makes it for me. I had been looking for dried fava beans because I had read somewhere that it was originally made with dried ones, bu...

Hiyashiru" Cold Miso Soup

Hiyashiru is a local dish of Miyazaki Prefecture, but recently it has become known nationwide in Japan. Hiyashiru is often pronounced with a voiced sound "hiyaJiru", but according to my wife who has been grown up in Miyazaki Prefecture, Native use a clear sound "hiyaSHiru" . Therefore, we call it "hiyashiru" in my family. I think the clear sound better expresses the refreshing taste of the cold soup. Our hiyashiru is made by dissolving "miso" fermented soybean paste in water and added boiled chicken fillet stripes, sliced cucumber, "myoga" Japanese wild ginger, young ginger, sesame, etc. It's my wife's original ide...
