Hiyashiru" Cold Miso Soup

Hiyashiru

Hiyashiru is a local dish of Miyazaki Prefecture, but recently it has become known nationwide in Japan.

Hiyashiru is often pronounced with a voiced sound "hiyaJiru", but according to my wife who has been grown up in Miyazaki Prefecture, Native use a clear sound "hiyaSHiru" .

Therefore, we call it "hiyashiru" in my family. I think the clear sound better expresses the refreshing taste of the cold soup.

Hiyashiru" Cold Miso Soup over Rice with Barley

Our hiyashiru is made by dissolving "miso" fermented soybean paste in water and added boiled chicken fillet stripes, sliced cucumber, "myoga" Japanese wild ginger, young ginger, sesame, etc.

It's my wife's original idea to add chicken fillet.

I think barley rice goes better with hiyashiru than white rice.

Chill the soup with ice. In contrast, barley rice should be served as hot as possible.

It's the perfect dish for hot summer mornings.
